They tell which one or how many is being referred to.
These adjectives are called limiting adjectives.

The Largest Bird
I am writing my Science report about ostriches. I could not find any information about them. Then the librarian's aide showed me a wonderful book.
According to that book, the ostrich is the world's largest living bird. It can stand as high as nine feet tall. Its weight may reach as much as three hundred pounds. That is a really big bird!
Ostriches are birds, but they do not fly. Their wings are too small to lift their heavy bodies off the ground. An ostrich's legs are very long. These long legs allow the ostrich to move very fast. One ostrich can run as fast as seventy kilometers an hour.
An ostrich can kick very hard. Just the first kick can break a lion's back.
In the 1900s, most women's hats had ostrich feathers on them. All hunters could think of was money. As a result, ostriches almost became extinct.
